nacho ‘cheese’dip and chips


Beyond animal meat our human habit of consuming other animal-derived products causes great harm to the planet, and suffering to the animals involved. These foods are a product of these animal’s reproductive systems, cows milk is the most common and obvious example of this practice. The consumption of cows’ milk is especially excessive in the industrialised global north’s food cultures and is a foundation of so many of our comfort favourites - ice-cream, cheese, yogurt, creamy soups, milk in coffee, the list goes on. In fact all the recipes on this site included dairy in their original form,  maybe it is the ultimate comfort ingredient? This nacho cheese dip represents the love for dairy across cultures, an indulgent, convenient and for some nostalgic snack food. ︎

Recreate a classic cheese dip, prepare with care and compassion a comfort-for-all version of the original. Cause no harm to dairy cows, and contribute to a healthier planet. Serve as a comfortable norm challenging appetizer or snack!



ingredients



/cheese dip:
- 2 medium/large potatoes 
- 1 large carrot
- 1/2 yellow onion
- 1 tbsp pickled jalapeño liquid
- 1 tbsp pickled jalapeños
- 2 tbsp nutritional yeast
- 2 tsp lemon juice
- 1 tsp salt
- 1 tsp garlic powder
- 2 dl oat cream
- 2 tbsp neutral oil
- 1 tbsp light miso paste (optional) 
- 1 tbsp tapioca starch (optional) 
/chips:
- corn tortillas
- oil & salt 
(or simply buy ready made tortilla chips!) 
/topping: (optional) 
- plant-based cheese
- extra jalapeños












instructions



Peel and cube the potato and the carrot, peel half an onion and cut in smaller chunks. Boil the vegetables in a small pot of water until everything is nice and soft throughout! 

Strain the boiled veggies and mix together with the remaining cheese dip ingredients in a blender until very smooth!

Either heat the dip up in a small saucepan to thicken, or bake it in the oven with extra grated ‘cheese’ on top on 190ºC for around 15 minutes!


Make the chips by lightly coating both sides of the tortillas with oil and sprinkle with salt. Cut them up in triangular shapes and bake on 190ºC for 10 minutes! - Or get your favorite storebought tortilla chips, you can also serve the dip with your favorite veggies!
